Because sometimes I just feel lazy, I use shortcuts. Like adding shrimps and fresh cilantro into instant noodles. Once I even threw in the still frozen shrimps into the boiling water with noodles. My aunt showed me this trick ages ago, when she also used instant noodles to make lo mein or chow mein (in the Philippines we call this dish “Pancit Canton”) by stir frying the noodles in a bit of water before adding mixed vegetables, then adding her own seasoning. I took it two extra steps further by using the already soft parboiled Yaki-Soba noodles, adding commercial frozen vegetables (completely thawed preferably), then the seasoning powder that came with the noodles.
