Cucumber Salad

cucumber saladFor years I only ate cucumber prepared this way, with vinegar sweetened with sugar. It’s actually a Spanish and Japanese dish as well. So I made my own Pacific Northwest version, with wala-wala onions! The only ingredient I am missing here is ginger.

INGREDIENTS for dressing:

  • 1/4 cup white vinegar or red wine vinegar or rice vinegar
  • 2 tsp sugar (add more if you like it sweeter)
  • 1/4 tsp salt (or more), pepper.

The toasted sesame seeds make it Japanese. If you like you can add a few drops of sesame oil. It’s better with seasoned rice vinegar. Filipino version use cane vinegar and 1Tbs sugar n 1 tsp salt. Slice everything as thinly as possible to absorb the dressing better.
